Chocolate Chip Blondies (Made with Stevia and Almond Flour)

I don’t know about you, but I’m a huge fan of chocolate chip anything! Since I created these stevia chocolate chip cookies, I’ve been playing around with other ways to use almond flour and stevia in my baking. This led me to create my Stevia Chocolate Chip Blondies!

Almond flour has a more crumbly consistency compared to other flour options, so I decided to try a moist batter and a longer cooking time. The result is a cross between a scone and a blondie! The blondies have a slight crisp to them with a soft, chocolate chip center.

Enjoy with a cold glass of almond and some extra dark chocolate on the side!

  • 3/4 cup almond flour
  • 1/2 cup sweetener (I use cup for cup stevia)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 3 tablespoons butter
  • 1/2 cup dark chocolate chips or chunks (I cut a dark chocolate bar into chunks)

Instructions
  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Combine dry ingredients in a medium mixing bowl: almond flour, stevia, baking powder, and salt.
  3. Melt butter in a small saucepan on the stove or in a small bowl in the microwave for about 40 seconds.
  4. Beat egg in a medium mixing bowl and add to the dry ingredients. Then add the melted butter.
  5. Mix until a wet dough forms. Stir in the dark chocolate chips or chunks.
  6. Spread the batter on the lined baking sheet, creating a 1/2 inch thick rectangle.
  7. Bake in the oven at 350°F for 15 minutes.
  8. Remove from oven and let cool on a cooling rack or plate for about ten minutes.
